Microwaved Baked Potatoes: 12 Minute Dinner!

Microwaved Baked Potatoes: 12 Minute Dinner!

12 minute dinner! Baked potatoes. I actually microwave mine though. It’s super fast and easy that way. They are so filling and satisfying. You can make them vegetarian style or add some bacon crumbles for some added flavor and protein. Here’s how I make them…

Ingredients

  • Russet potato
  • Butter
  • Salt and pepper
  • Steamed broccoli and peas
  • Shredded sharp cheddar cheese
  • Ranch dressing
  • Optional toppings: canadian bacon, cooked bacon crumbles, sour cream

Instructions

Wash the potato. Pierce the potato with a fork a few times. Microwave on a plate for 5 minutes, turn it over and microwave for another 5 minutes, or until it’s soft enough. Add butter, salt, pepper, broccoli, peas, cheese, ranch in that order.

Chocolate Chip Cookie Wars

Chocolate Chip Cookie Wars

Do you have the best chocolate chip cookie recipe? Or know someone who does? Tell me where I can find it because… Believe it or not…I’m still on the hunt for the best chocolate chip cookie recipe. Don’t get me wrong, we’ve got a couple pretty darn good ones, but I just know there is a better one out there. Bonus points for a cookie that is still soft and chewy next day.

Based off of suggestions from you guys I decided to try Sally’s Baking Addiction’s Chewy Chocolate Chip Cookies  and Six Vegan Sister’s mini chocolate chip cookie recipe. The winner was…

Macro-Friendly Breakfast Sandwich

Macro-Friendly Breakfast Sandwich

I’ve discovered that I really enjoy a savory breakfast. So many breakfast foods are sweet, and they have their place, but sometimes I’m just not in the mood for something sweet in the morning. This Macro-Friendly Breakfast Sandwich has become a staple for me. I’ve been trying to get more protein in my diet to help build more muscle and I’ve noticed that eating a lot more protein not only has helped me build muscle, but I’m not nearly as sore after my workouts anymore.

I love to have this sandwich with a glass of Fairlife fat-free milk. It boosts my protein intake by 13 grams per cup and it actually tastes pretty great. An added bonus is that it is lactose-free for those of you who have a hard time digesting lactose. Anyway…back to the sandwich!

Macro-Friendly Breakfast Sandwich

Ingredients

  • 1 English muffin
  • 3.5 oz (scant 1/2 cup) egg whites
  • 2 slices turkey or ham (I use Hormel Natural Choice)
  • 1 tsp. French’s honey mustard
  • 1/2 Wedge of The Laughing Cow light cheese original
  • Trader Joe’s Everything But the Bagel Seasoning
  • Salt

Instructions

Heat up a frying pan at medium heat. Spray the pan once it’s hot with cooking oil. Pour the eggs in the pan and let them sit until cooked. Don’t mix them. Sprinkle the eggs with Everything But the Bagel Seasoning and salt.

While the eggs are cooking, toast the English muffin.

When the eggs are cooked, fold them in half like an omelet and then i half again. Turn off the heat and place the meat on the pan briefly to get it warm.

Take the English muffin out of the toaster and spread the cheese on both sides and spread the honey mustard on top of that. Add the meat and eggs to the muffin and enjoy!

Thanksgiving Table Decorations

Thanksgiving Table Decorations

Since we are approaching Thanksgiving, I thought I would share how I decorated my table last year. I usually try to decorate for occasions with things I have on hand, which is what I did here. The tablecloth and floral centerpiece are from Target and the plates are from my favorite Corelle dishes.

I’m a big believer in making table decorations beautiful and functional. The first priority for me is that everyone can see each other from across the table. I don’t believe in centerpieces that go so high that it obstructs the view of everyone at the table.

Adding layers, different textures, and colors that complement each other all help to bring a table setting together.
