The Best Crackers – Triscuit Thin Crisps

I grew up on Triscuits. I always liked them, but when I became an adult I decided that I didn’t like how thick and heavy they were. I stopped buying them and went for other crackers for a long time. Then one day I was browsing the cracker options and saw Triscuit Thin Crisps. I was curious. Could these be the answer to my struggle with Triscuits? I bought some and they did not disappoint. I’ve been buying them ever since. They are great for cheese and crackers, dips, with cottage cheese, all kinds of things. Triscuit Thin Crisps are the perfect balance of healthy, tasty, light, and salty.

Ingredients are important to me so I was happy to see that the ingredients include: whole grain wheat, canola oil, sea salt.

Oh how I love them.

The Best Swedish Pancakes

The Best Swedish Pancakes

I found this Swedish Pancake recipe in The Food Nanny Rescues Dinner Again! recipe book and haven’t looked back. Lucky for you, this recipe is available online as well at thefoodnanny.com. I start by adding all of the ingredients to my blender. I use the BlendTec blender, but any blender will work. After the ingredients are all blended, all you have to do is pour it slowly into a hot, oiled skillet. 

I tilt the pan from side to side to thin out the pancake a little. Once the edges are cooked it is ready to flip. I use a very thin, bendable spatula to flip it. You will probably need to experiment with the heat. The recipe says to cook it on high heat, but I find that a medium heat works better for me.

Swedish pancakes, or crepes, can be very tricky to cook right. I tried multiple other recipes before finding the perfect one. Don’t give up if they don’t work out perfectly the first time. It can take some practice. I like to top my Swedish pancakes with homemade strawberry freezer jam. My kids love them with syrup, chocolate syrup, caramel syrup, whipped cream, powdered sugar, and fresh fruit.

The ingredient list says to use Kamut flour but it isn’t necessary. Regular white flour will work just fine.

  • 1 3/4 cups White Kamut Flour
  • 2 Tablespoons sugar
  • 1/2 teaspoon salt
  • 3 eggs
  • 3 cups milk
  • 1/4 cup melted butter
  • Canola for frying

The Best Dishes

I use the Corelle Winter Frost dishes. I have had these for many years and they hold up fantastically. It is almost impossible to break them, and I love the classic white look. I tend to get sick of colors and patterns and want a change, so plain white was a wise choice for me. These will never go out of style, and I will never get sick of them. The size and shape of the bowls and plates are perfect. The Corelle Winter Frost dishes are worth every penny!

This French Toast recipe from Barefoot Contessa is incredibly decadent. It’s as good as any French Toast I’ve had in a restaurant. My kids loved it. I usually choose between jam or syrup when eating French Toast, but this time I tried it with both. I used Kirkland Signature Pure Maple Syrup and my homemade strawberry freezer jam. I usually don’t buy white bread, but went all out and bought some Brioche bread for this recipe. I’m going to try it with wheat bread as well and see how it is.

My kids love having breakfast for dinner. I try to make breakfast for dinner once a week. It’s usually easier and it’s always a crowd pleaser. Give this recipe a try! You won’t be disappointed.

Ingredients

  • 6 extra-large eggs
  • 1 1/2 cups half-and-half or milk
  • 1 teaspoon grated orange zest
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon good honey
  • 1/2 teaspoon kosher salt
  • 1 large loaf challah or brioche bread
  • Unsalted butter
  • Vegetable oil

To serve:

  • Pure maple syrup
  • Good raspberry preserves (optional)
  • Sifted confectioners’ sugar (optional)

Shepherd’s Pie

Shepherd’s Pie

This Shepherd’s Pie from Mel’s Kitchen Cafe was a little different than what I’m used to. The Shepherd’s Pie I grew up on had green beans in it instead of peas, and there was no corn. Another name I’ve heard for Shepherd’s Pie is Monday Night Casserole. The idea is that you take leftovers from Sunday dinner and use them in a casserole the next night, hence the name.

I liked this Shepherds Pie. It had plenty of flavor, and I found that the ratio of meat and veggies to potatoes was just right. When I was preparing it I was afraid I wouldn’t have a thick enough layer of potatoes, but it turns out that you don’t want a thick layer or else you will have too much. I would definitely make this Shepherd’s Pie again, but I would sub the peas for green beans, and either used corn or carrots with it.

INGREDIENTS

POTATO LAYER:
  • 3 medium russet potatoes, peeled and chopped (about 4-5 cups)
  • 2 tablespoons butter
  • 1/2 – 1 cup milk
  • 1/2 cup Parmesan cheese
  • 1/2 cup shredded sharp cheddar cheese
  • Salt and pepper
  • 1 teaspoon garlic powder
  • 1 egg yolk
MEAT FILLING:
  • 2 – 2 1/2 pounds ground beef, turkey, lamb, or sausage (or a combination of any)
  • 1 cup chopped onion
  • 2 large carrots chopped small (about 1 cup)
  • 2 cloves garlic, finely pressed
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons flour
  • 1 tablespoon tomato paste
  • 1 1/4 cups low-sodium beef or chicken broth
  • 1 teaspoon worcestershire sauce
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme (or 1 teaspoon fresh)
  • 1/4 teaspoon dried rosemary (or 1 teaspoon fresh)
  • 1/2 cup frozen corn kernels
  • 1/2 cup frozen peas
  • 1 cup shredded sharp cheddar cheese

Cooking Gloves

The first product I’m going to share with you is cooking gloves. They are disposable, affordable, and practical. I like to use gloves when I’m working with raw meat or fish, garlic or other strong smelling ingredients, or when I’m mixing something with my hands. It makes the whole experience a lot more enjoyable for me. They are worth every penny. The box comes with 100 gloves inside, so it should last you quite a while.

Now that I have them, I have found that they come in handy for all kinds of things. I use them when I’m working in my backyard or to clean with as well.
