Don’t get me wrong, we’ve got a couple pretty darn good ones, but I just know there is a better one out there. Bonus points for a cookie that is still soft and chewy next day.
Based off of suggestions from you guys I decided to try Sally’s Baking Addiction’s Chewy Chocolate Chip Cookies and Six Vegan Sister’s mini chocolate chip cookie recipe. The winner was…

I you want to cut the fat amount considerably, I recommend using PBFit All-Natural Peanut Butter Powder in place of the peanut butter.

I’ve discovered that I really enjoy a savory breakfast. So many breakfast foods are sweet, and they have their place, but sometimes I’m just not in the mood for something sweet in the morning. This Macro-Friendly Breakfast Sandwich has become a staple for me. I’ve been trying to get more protein in my diet to help build more muscle and I’ve noticed that eating a lot more protein not only has helped me build muscle, but I’m not nearly as sore after my workouts anymore.
I love to have this sandwich with a glass of Fairlife fat-free milk. It boosts my protein intake by 13 grams per cup and it actually tastes pretty great. An added bonus is that it is lactose-free for those of you who have a hard time digesting lactose. Anyway…back to the sandwich!
Macro-Friendly Breakfast Sandwich
Ingredients
- 1 English muffin
- 3.5 oz (scant 1/2 cup) egg whites
- 2 slices turkey or ham (I use Hormel Natural Choice)
- 1 tsp. French’s honey mustard
- 1/2 Wedge of The Laughing Cow light cheese original
- Trader Joe’s Everything But the Bagel Seasoning
- Salt
Instructions
Heat up a frying pan at medium heat. Spray the pan once it’s hot with cooking oil. Pour the eggs in the pan and let them sit until cooked. Don’t mix them. Sprinkle the eggs with Everything But the Bagel Seasoning and salt.
While the eggs are cooking, toast the English muffin.
When the eggs are cooked, fold them in half like an omelet and then i half again. Turn off the heat and place the meat on the pan briefly to get it warm.
Take the English muffin out of the toaster and spread the cheese on both sides and spread the honey mustard on top of that. Add the meat and eggs to the muffin and enjoy!

My husband and I took a trip to Italy years ago and fell in love with the food over there. One thing that my husband couldn’t get enough of was the basil pesto. We were familiar with it before this trip, but had never learned to appreciate it.
When we got home from the trip I learned to make it myself, but found that a common ingredient in pesto is pine nuts and they can get pretty pricey and can be hard to find. I made it with walnuts instead of pine nuts sometimes and it worked pretty well. Making it myself was so much better than any of the store bought stuff I’d purchased until I tried Costco’s pesto. The price couldn’t be beat, and the flavor and freshness was just as good as anything I had made at home. If you haven’t tried Costco’s pesto before, you should!
So I found this recipe and had to try it. It was so good! It goes with so many different sides and everyone who tries it really likes it. It reminds me a bit of Chic-fil-a’s grilled chicken, but better! Give this a try and you won’t be disappointed! This grilled chicken is truly the best.
Tips: I like making mine with chicken tenderloins as well, and I prefer to broil mine. It keeps the chicken from drying out.
Ingredients:
- 2 pounds boneless, skinless chicken breasts
- 1 cup pesto (storebought or homemade)
- 1/4 cup rice vinegar
- 1 teaspoon salt
- 1 teaspoon sugar

Since we are approaching Thanksgiving, I thought I would share how I decorated my table last year. I usually try to decorate for occasions with things I have on hand, which is what I did here. The tablecloth and floral centerpiece are from Target and the plates are from my favorite Corelle dishes.
I’m a big believer in making table decorations beautiful and functional. The first priority for me is that everyone can see each other from across the table. I don’t believe in centerpieces that go so high that it obstructs the view of everyone at the table.
Adding layers, different textures, and colors that complement each other all help to bring a table setting together.
